dont know why my chiles is not bright red color when I bought it but dark red color, so my chorizo kind dark red.
I like it bright red color look nice.maybe next time I will buy guajillo powder.

I made this last year with ground turkey. It was awesome. Making it again today but with ground pork and home grown guajillo peppers. Those seeds from the dried one will grow into terrific pepper plants you know!

Mija, thank you so much. I can always count on your simple, easy, delicious recipes when I’m not sure of what to make. We had 3 lbs of good ground pork that we weren’t sure how to use. I thought chorizo! But I don’t have a written recipe. Immediately I thought of you and sure enough there you had it. I love to cook but don’t always remember all the ingredients. Knowing I can turn to you for help is reassuring and that’s saying a lot for a 69 year old abuelita. Hugs. 😘

I have never wanted to eat chorizo because of how greasy and messy it always looked. Not appetizing to me at all. But with a lower fat meat, I might try making some.

Don’t throw those seeds away! Use a coffee/spice grinder to pulverize them and add them back in, for an extra hot finished product.

Allow me to suggest that if you will add the kosher salt in your mortar with the ingredients to be ground, prior to using the pestle, it will grind much easier, faster and finer.

Why do I always end up with the skin not chopping and blending and then I have to pick it out when it's cooking? Made three times and the same thing. I've used 3 different chopping apparatus.

Tried this recipe tonight. I made the recipe exactly as you did, except that I ground my own pork shoulder. The first pound I made had great flavor, but I like it a little hotter. I made a second batch and added 3/4 teaspoon red pepper flakes. The heat on the second batch is perfect, but I'll run the pepper flakes through a coffee grinder next time. I also split the paprika on the second batch between fancy paprika and smoked paprika, using the total amount you specified. Thanks for this recipe. It's definitely a keeper and one I'll use many times…

I had chorizo on nachos a long time ago and was hooked. But you rarely see it on nachos, mostly mixed with eggs. This looks like a good recipe as it uses ground pork rather than the offal that is used in store bought chorizos. Plus lower fat. Should work great for nachos!

Now I understand why it is so flavorful. That’s a ton of seasoning for such a small amount of meat. I’ve tried a different recipe in the past, but it didn’t even come close to being right. I can’t wait to try yours. It looks right.

Using kitchen scissors will help prevent your Guajillo chilies from falling apart just be sure and let most of the seeds fall out after tearing off the stem.

My best advice: Make sure you use a food processor. Do not try this with a blender. You will spend hours trying to puree the chiles. I blew my blender motor out and all it did was nothing, just like the video showed.
